WHere is a home-style take on a cocktail featured on the seasonal cocktail list. It's a party-sized premix which is bursting with the flavours associated with Christmas time, rendering it excellent for your celebration. Any leftover citrus syrup to use in brunch beverages, desserts, or to mix another batch of the drink.
Bikini Recipe
Yields 10 servings
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Combine every items inside a saucepan, heat until it reaches a simmer, stirring until the sugar dissolves. Then, turn off the burner and let it to reach room temperature completely. Transfer into an sterilised bottle, seal keeping it chilled, where it will keep for up to four weeks.
For the Cocktail Base: Mix all the liquid ingredients into a large bottle, allow it to infuse for an hour, then filter it best through muslin, to ensure it's perfectly clear.
For serving: Measure 85ml of the premix into your stirring glass containing ice, and stir carefully for a minute until cold. Filter into a chilled martini glass or equivalent, decorate with some cranberries adding the final touch using a light spray of the essential oil above the glass.
